Since opening in 2006, our family-run restaurant has kept the spirit of authentic Italian pizza alive — combining craftsmanship, premium ingredients, and the passion of our Sardinian chef Paolo Olmetto.
Every pizza that leaves our wood-fired oven tells a story of time, skill, and love for real Italian food. Because at 4 Stagioni, making pizza isn’t just cooking — it’s an art.
The dough process – technique, time, and Italian authenticity
The secret to a great pizza begins long before it reaches the oven.
At 4 Stagioni, we use flours imported directly from Italy, milled slowly to preserve their purity and the perfect balance between strength and elasticity.
Our dough is made fresh every day, following a traditional Italian method based on:
- Slow natural fermentation (24 to 48 hours) to develop complex aroma and lightness.
- High hydration (65–70%), resulting in a crust that’s crisp on the outside and soft inside.
- Hand-kneading and cold resting, which improves texture and makes it easier to digest.
Each dough ball is hand-stretched — never rolled, to preserve the natural air bubbles that create that beautiful golden, airy crust.
Our wood-fired oven reaches temperatures above 400°C, cooking each pizza in just 90 seconds and sealing in that unmistakable smoky aroma and soft interior.
